Umngqusho (Xhosa for Samp and Beans), Afrikaans: Mielies en Bone.
- Made of stamp mielies (samp) with sugar beans, butter, onions, potatoes, chillies andlemons, made to simmer.
- A Xhosa variant made with "samp and beans" that is served with butter or fat was Nelson Mandela's favourite dish.
- I will be making this dish as my 'soup' at the Horniman Farmers Market and Sydenham Fair in honour of our dearly departed Madiba. Come and enjoy!
